When the Greek philosopher Hippocrates, who is considered by many, the father of modern medicine, said some 4,000 years ago, “Let thy food be medicine and medicine be thy food,” he was speaking directly to the pharmacological effect food has on the health of the human body. Since food as medicine is ancient wisdom why is western medicine just beginning to embrace its importance? The ancient Chinese, East Indian, Native American, and African cultures have used food medicinally for millennia. With all of its technological advancements, medical wonders, and miracles, why has the Western world, particularly the United States, been so resistant in embracing a commonsense approach to disease? After all, many of the diseases that afflict modern-man are self-inflicted. That is, we continue to create technologies that work against our health while subsequently destroying the health of topsoil's with over-crop rotation as well as monocrops.
